I'd guess RV owners are about evenly spit on this issue, I read quite often about RV owners removing the ice maker, preferring a counter-top ice maker or using the old-fashoned trays.
It's your RV, do as you wish to make it yours. We have friends who full-time, they removed the ice maker to gain the added freezer space and never regretted the decision.
I once had an aunt that never used her oven because she was concerned about trade-in value.
